Healthy Hummus Wraps

{Meatless Monday}


Yum...Yum...Yum!!  These were so simple, so fresh, and REALLY delicious.

 I came home from my Book Club Retreat with some leftover hummus (thanks, Anna!).  And when I saw this recipe, I was so excited to use it.  


This is my book club (missing 2 ladies) out on the boat last weekend.  This is what we did after staying up late eating tons of yummy food and being out shopping all morning.  ; )  

But anyway...back to the hummus!!


Here's what you need:


Whole wheat tortillas
Hummus--1-2 T per wrap  Any kind will work--we had spinach and artichoke hummus
Cucumber--4 slices per wrap
Lettuce
Tomato slices--3 per wrap
Feta cheese--1 T per wrap
Red Onions--finely diced to sprinkle on top

The recipe actually called for capers, but I just did red onion for a little kick.  I didn't want to try to hunt down capers at the store.

Spread hummus on each tortilla.  Place 4 slices of cucumber down the middle and top with lettuce, tomato, onion, and feta cheese.


This was the PERFECT summer meal...no hot oven and everything was crisp and fresh and light.  I will share the recipe for the coleslaw next week.  I am not a huge coleslaw fan, but my hubby planted cabbage, so I had to do something with our cute little head of cabbage!  But this version was actually pretty scrumptious--lots of cilantro and a little jalapeno kick!
