Baked Potatoes Florentine

{Meatless Monday}


I'm finally back!  I promised I would have a new recipe today, so off to the store I went this afternoon at 4:30 pm to grab ingredients for a new one I had just pulled out of a magazine.

And it is a keeper!  I really liked these.  I love that they are TOTALLY different from the same-old stuff I always throw together.  We really don't eat a lot of potatoes, so it was a nice change for us.

I LOVE that they are super easy and quick.  You cook the potatoes in your microwave.  ( I can NEVER remember to put potatoes in way before dinner time!)  And I think Feta is my favorite cheese.  I love everything that uses feta!
The best thing about this recipe is that I got to use one of my beautiful new "sauce cups" that I bought at Tai Pan during my retreat weekend.  I love them. They are just so pretty.  I used it to hold the little egg yolk. ; )


Here's what you need:


4 Idaho baking potatoes, scrubbed ( I made 5 large ones, actually)
1 T olive oil
1 large onion, chopped
1 bag (9 ounces) spinach, coarsely chopped
1/2 tsp sale
1/4 tsp pepper
1 large egg, separated
1 package (4 oz) crumbled feta cheese

Heat oven to 400*.  Pierce potatoes with a fork.  Place on paper towels in microwave and cook on high for 16 minutes, turning halfway through.

Meanwhile, cook onions in olive oil for 7-8 minutes.  Add 1/2 the spinach and cook down slightly.  Add other 1/2 and cook until all is wilted.  (It seems like a TON of spinach, but it cooks down to so little!)  Season with 1/4 tsp of salt and the pepper.

Remove from heat and cool slightly in a large bowl.

Line a baking sheet with foil.  Place potatoes on foil.  Cut open and sprinkle with remaining salt.


Beat the egg white to stiff peaks.  Stir in the egg yolk to the slightly cooled spinach mixture and all but 2 T of the feta cheese.  Fold in egg whites.  Divide mixture evenly onto potatoes.  Sprinkle with remaining feta.

Bake at 400* for 10 minutes.  Turn oven to broil and leave in 2 minutes more. 

These were really flavorful...I just love how feta melts in your mouth with that creamy/salty tang.  Mmmmm.   I put some sour cream on the table and my husband used some, but I loved it just as it was.  Enjoy!  And I hope everyone is having a great summer!

I have many wonderful new recipes just waiting to be made. There have been SO many vegetarian recipes in ALL of my magazines lately....I love it!

  1. Made this tonight- We all loved the topping! Next time I need to double the topping for the potatoes. Yum!
